The sky is the limit at Galaxy 66 Bar & Grille. And that’s just how we all felt when owners Tammy & Roger Cebula proudly opened the renovated and expanded rooftop Skye Bar. The swank restaurant, which is regionally renowned for its modern décor and upscale, trendy atmosphere, was this summer’s hot spot to meet and mingle, and dine and enjoy music under the stars. Of course it has been closed since colder weather set in, but Tammy, who also operates Lovin’ Life Limos, Late Night Liquor & Kegs, and Delmarva Bridal Showcase by Lovin’ Life, Ltd., is excited to announce that two parties are planned for New Year’s Eve: in the beautiful restaurant with music by The Philly George Project and at the Skye Bar.     The Star Bar, on the entry level separated from the main dining room by the spacious bar, offers an equally stellar experience, with live entertainment and a “star wall” of local celebrity photographs. Friday nights are “Jazz Fridayz” in the Star Bar, featuring The Philly George Project.
    During this off-season Galaxy 66 is happy to offer their customers three nights of money-saving specials. Tuesdays buy your choice of Appetizer and get the second one (of equal or lower value) at 1/2 price. On Wednesdays a similar deal is offered with buy one Entrée and get the second (of equal or lower value) at 1/2 price. Every Thursday all Wines are offered at 1/2 price. Now that’s a deal! And the wines at Galaxy 66 have been recognized with the Wine Spectator magazine’s 2011 Award of Excellence.
    The unique food recipes at Galaxy 66 Bar & Grille feature the finest fresh and seasonal ingredients. The menu changes with the seasons, and only the best of the best cuisine is served year round. A spiral staircase leads to multi-level dining areas with contemporary artwork and modern lighting fixtures. And this holiday season the decorations are just beautiful. You must come see the incredible Christmas tree hanging from the ceiling as you walk in. And all the new additional lighting around the building’s exterior that constantly changes color is simply spectacular.
    After a lovely hostess shows you to your table, you will be welcomed by an extremely professional and knowledgeable server who will recite the daily specials. You’ll want to begin with one of their delicious appetizers such as the always popular Seared Rare Tuna creatively prepared according to the Chef’s choice each day. Also popular is the assorted Cheeses tray served with fruit, the Seared Foie Gras, or Mussels in a brown ale beer sauce. The Tenderloin Tips are a popular appetizer as well, nearly the size of an entrée. And if you like shrimp you’ll want to try the Shrimp sautéed with prosciutto and broccoli in a spinach cream sauce. A delicious soups and salads menu is also available.
    Choices abound on the entrée list. Seared Scallops are arguably the best thing on the menu. But many continue to choose the Pistachio Encrusted Rockfish. The menu may change seaasonally but this one is always available. For the beef lover a New York Strip Steak is offered, grilled and served with sweet potato fries with spinach and housemade bacon sauté, finished with horseradish barbecue sauce.
    Other noteworthy entrées at Galaxy 66 Bar & Grille are Broiled Crab Cakes, Pork Ossobucco, Chicken Roulade, Gnocchi, a potato pasta with fall mushrooms in a tomato sauce, Seafood Bouillabaise and Seafood Pasta featuring shrimp and crab meat in a vodka cream sauce with roasted red peppers and broccoli topped with shaved parmesan. And let’s not forget the Salmon roasted with a chili rub and served with fingerling potatoes, roasted red peppers and sweet peas, finished with roasted garlic cream sauce. Is your mouth watering yet? Mine sure is. All entrées are served with housemade rosemary focaccia bread.
    Galaxy 66 also features a lighter fare menu, including its award winning Cheesesteak, which is slow roasted ribeye, caramelized onions, chiffonade romaine, chimichurri mayo, and black mountain cheese sauce on a housemade roll. Roast Chicken, Open-face Turkey, Pulled Pork Barbeque, Seared Duck Breast, and Crab Cake are just a few of many delicious sandwiches on the lighter fare menu. Try the Lobster Club for a unique concoction of mesculin greens, bleu cheese, apples, pita stars, and smoked scallop. Crab Pizza is prepared with a marinara sauce with chorizo sausage, charred peppers and onions with mozzarella and basil.
    For dessert you might choose their amazing Carrot Cake or Vanilla Cheesecake. Every day is a surprise as the chefs prepare inhouse different flavors of ice cream and sorbets. Dessert martinis include Tiramisu, Root Beer Float, Chocolate Covered Cherry, and Pineapple Upside Down.
